Summer time cooking is all about grillin’ and chillin’; BBQ slathered fingers holding ice cold beverages. Sign me up! Now, I can’t grill as often as I’d like, but I can still savor that BBQ flavor throughout the week with my simple, fresh chicken recipe sponsored by Foster Farms®. Yes! This shredded chicken with homemade cherry BBQ sauce is perfect for summer!
I love using fresh chicken because it has a light flavor that’s easy to pair with fresh summer fruits and veggies. Take cherries, for example. Here in the Pacific Northwest, beautiful cherries are front and center at every grocery store. It’s a great time of year. So, naturally, I had to put fresh cherries and fresh chicken together.
Shredded chicken is ideal for a weekend food prep session because of the best kitchen invention ever, the crockpot. Once cooked, shredded chicken can appear in several different dishes throughout the week, like a hot sandwich or cold protein for your salad. You can eat it for lunch over rice, stuff it in an avocado for a snack, or present it in lettuce wraps as an appetizer! The possibilities….
Now, let me show you how I made it!
First, the Cherry BBQ Sauce.
- 1 Tbs Coconut Oil
- ½ Medium Onion, Diced
- 1 Clove Garlic, Grated
- 1 ½ Cup Fresh Cherries, Pitted
- ¼ Tsp Fresh Ginger, Grated
- ¼ Cup Tomato Sauce
- 1 Tbs Mustard
- 1 Tbs Maple Syrup
- 1 Tbs White Vinegar
- Salt & Cumin To taste
- Put coconut oil in small saucepan on low medium heat. Sautée onion until soft (3 minutes). Add garlic and sautée for 1 minute.
- Add cherries and ginger. Let cook for 5 minutes, stirring occasionally, or until cherry juices start to release.
- Add tomato sauce, mustard, syrup, vinegar, and seasonings. Stir in for 2 minutes.
- Reduce heat to a simmer and leave for 5 minutes.
- Remove from heat and let cool.
- Blend the sauce until smooth (I used an immersion blender).
Now that your sauce is ready, let’s cut to the chicken.
Second, the Shredded Chicken!
I used two trays of Foster Farms® Simply Raised Breast Fillets, or a little over 2 lbs & the entire batch of Cherry BBQ Sauce.
What is Simply Raised chicken? It means no fancy antibiotics. Ever. It means American Humane Certified and locally grown in Oregon and Washington! I love the updated Foster Farms® look. I also love that it’s 100% natural, meaning they don’t add in any of those pesky preservatives, steroids or hormones. It’s simply meat!
Doesn’t that chicken look good? Healthy, lean protein!
I think it’s incredibly important to search out the best ingredients for your food. If we want to stay healthy and fit, run faster and farther, and expect our bodies to perform better, we need to give our bodies better, healthier food. - Put chicken in a crockpot and sprinkle in a little salt.
Did you know Foster Farms® doesn’t add sodium to their Simply Raised chicken?
- Cover chicken breast in the sauce!
If you’d like to use a different BBQ sauce, just use enough to cover the chicken.
If you want to make a sloppy-joe style sandwich, don’t put all the Cherry BBQ sauce in the crockpot. Saving some to add on top later will make a tangier dish.
- Cook on high for 3 hours.
Spend some time preparing other meals for the week or go for a run.
- Remove chicken and shred with two forks.
Place back into crockpot for 10 minutes to soak.
- Serve it up or save it for the week!
The end result is summer fresh and savory. The Cherry BBQ sauce mellows during the cooking process, featuring the fresh chicken flavor!
The best part? I’ve already made 4 meals with this shredded chicken this week and will get another 3 at least. Not bad for $13 worth of chicken!
