Okay, I’m going to be honest with you. Monday means nothing to me. I don’t have a typical work week and I don’t feel the Monday pressure. But if I did…and I wanted to do something special…I’d freeze double strength coffee into ice cubes on Sunday night and then wake up on Monday and make THIS:
Spoiler Alert: While this Mocha Coconut Frappé DOES taste good, this photograph is a total load of crap. I’ll explain what I mean as I show you how I made it.
OPTIONAL COFFEE CUBES
You can definitely make a great blended drink with plain ‘ol coffee (chilled) or instant coffee. You’ll just add extra ice cubes to make sure you get the slush just right. I had my husband brew up some coffee and freeze it last night so I could simplify and also be different. 😛
NOT OPTIONAL: GREAT MILK!
I got this carton to review and immediately knew I wanted to make a Mocha Coconut Frappé with it. It’s all the rage during the summer months – blended coffee drinks. You could go for straight up coconut milk but this blend works great. In fact, I like the almond/coconut blend MORE than just one or the other. It has a much more interesting flavor.
Unsweetened Shredded Coconut adds a fun texture to the frappé. I love having this stuff on hand. It works great with…everything!
BLEND, BABY, BLEND!
All I can say is, to get the right slush consistency, you have to experiment. I’ll fill my intended glass with ice cubes, then pour the liquid in the cup until it comes half way up. Then, I dump that into the blender and it usually works out about right for me.
I’ve been trying to find ways to use local honey. I hear it can help me curb the effects of spring allergies! This frappé will NOT be very sweet, so if you WANT it sweet, add your favorite sweetener.
I DREAM OF DRIZZLE
This is where the false advertising starts. I like to make a chocolate drizzle out of raw cocoa powder and coconut oil (sweetener added if desired). The thing is, coconut oil has to be WARM to be liquid. When it get’s cold, it hardens. So while it makes a great drizzle in the photo…you’re gonna have to spoon-crack it out of your frozen frappé if you want to eat it. Think of a dipped ice cream cone.
I found these crunchy coconut chips at the local grocery store and threw some on top for funsies. They do add some sweetness which is kind of fun. They said gluten-free and Non-GMO so they MUST be good, right?
LIES! IT’S ALL LIES!
I could leave you with this and make you think I drink fancy frappés in curvalicious glassware with hardened chocolate drizzle on the weekly. But then Moxie looks at me like I’m a fraud so a more truthful photo must be shared.
Regardless of my schedule, a Monday morning is still a Monday morning. If I’m going to do an iced, blended coffee and go about my day, it’s gonna look like this. Probably no drizzle either. It still fun to drink but if I showed you that, it wouldn’t encourage you try it out, now would it?
